Frozen Lemon Meringue Pie Bites



One of my favorite desserts is lemon meringue pie...I love the fabulous fluffy top and the delicious lemon filling that isn't too overly sweet.  These frozen little bites are a healthy and fun alternative and perfect for keeping on hand if you're craving something a little different.  They keep well in the freezer and use only a few simple ingredients too!

Here's what you'll need:
  • Lemon Greek yogurt
  • Cool Whip (use lighter varieties to keep calories down if needed)
  • Graham crackers
  • 3 sandwich bags
  • Foil covered cookie sheet that fits in the freezer
  • Kitchen mallet
  • Spoons
  • Scissors



Step 1: Cover a cookie sheet with foil.  Open yogurt and stir well.

Step 2: Spoon into a sandwich bag.

Step 3: Snip the corner and squirt into 1 inch blobs onto cookie sheet in evenly spaced rows.


Step 4: Prep the Cool Whip the same way (spoon into bag, seal, and snip corner).

Step 5: Squirt on top on each yogurt drop...to get that pointy peak on top, make the bag go straight upwards each time.

Step 6: With a kitchen mallet, place graham crackers into sandwich bag and crush into a rough powder.  Sprinkle a pinch of graham powder on each one.  Freeze overnight, peel foil off the backs of the bites and store in airtight container...enjoy!
